Armenian soup with red lentils and apricots
This is one super soup with an amazing taste and suits good as winter food. It's really simple to make.
1 yellow union
2 garlic cloves
1 cup red lentils
50 g dried apricots
1/2 teaspoon cumin
Start like this:
Chop the potatoes, carrots, unions, garlic, and apricots in smaller pieces. Put them in a hearthy pot and frye them with olive oil and a little butter. Puff over the cumin spice. At the same time, start boiling 10-12 dl vegetable stock in another pot.
Rinse the lentils in a strainer and add them to the vegetables and stir. After a while, add the vegetable stock to the soup pot and let it all boil on a low temperature for 30 minutes under cap.
When it's done you take help from a mixer or a blender and make the soup smooth, and add some lemon to it.
Done. Serve with bread and maybe some creme fraiche.
